Turkey Recipes
Turkey Soup & Sandwich
Ingredients
- Thanksgiving turkey carcass
- Celery
- Onions
- Carrots
- 1 cup long-grain rice
- Salt and pepper to taste
- Poultry seasoning (optional)
Pull meat from bones and place in container for sandwich. Place rest of the carcass in large pot and cover with water. Cook until the meat falls off. Discard bones and strain broth. Put broth and meat back in pot and add celery, onion and carrots. Add rice when carrots are tender. Rice will absorb excess broth. Salt and pepper to taste.
Yield: 8 to 10 servings
Soup freezes really well.
